I have been on a cereal kick this week! I have had cereal every morning so far, and I can't get enough!
I made my usual cereal with berries, but this time I mixed my two (new) favorite cereals: Kashi Heart to Heart Cinnamon and Kashi Go Lean Crunch Honey Almond. Delicious!
I love the crunchiness of the Go Lean Crunch and the flavor of the cinnamon from the Heart to Heart! Plus I can't get enough of the little cereal hearts! Spoon full of love! After breakfast, I took Win out for his morning walk. Lately, the weather in the morning has been beautiful! It is probably because of all the rain and afternoon storms, but it didn't show this morning! There was a gorgeous cool breeze and no humidity. It made the walk alot more enjoyable.
The sunrise was also quite a site this morning. The sky made a really neat pattern and had such rich colors! I love how the sun reflects off the clouds. Pretty pattern above the trees.
So, last night I was on my own for dinner because Brett was out of town for work. I had no idea what I was going to make but had an itch for some pizza.
I thought to myself, "Hmm, I have cheese, sauce, toppings, put what to do about the crust?" I looked in the fridge and had some low carb tortillas and thought that they could make a good low carb, thin crust pizza.
Alright, let's do it! I had no idea how it was going to turn out, but I actually enjoyed it immensely!
I baked the tortiall at 400 degrees for about 5 minutes, to crisp it up. Then I added the sauce, fat free cheese, broccoli, more cheese, and oregano. I baked it for about another 10 minutes, or until the crust was a golden brown, and the cheese was melted, and wha la! Fresh out of the oven! Close up, very close!
Monday flew by for some reason. I guess it was my hearty breakfast I had that kept me in work-mode all the way through lunch! I got some new Kashi cereal at the store on Sunday and so far so good! Cinnamon Goodness. Before I knew it, it was 5 o'clock and time to go. I headed home to take care of the doggies before heading to the gym. My usual classes were cancelled, so I decided to do my own weights workout at my neighborhood gym.
My Workout was as follows: I rotated muscle groups in each "round" from arms and upper body, legs and abs, to get a full body workout.
15 Min. Warm-up on the treadmill
Round 1: Shoulder Circuit: 10 forward raises, 10 lateral raises, 10 back raises Repeat 2x Walking Lunges: 3 sets of 12, with 10 lb weights Leg Raises(abs): 3 sets of 20
Round 2: Chest: 3 sets of 15, 10 lb. free weight, bench press, alternating with 3 sets of 15 pushups Squats: 3 sets of 10, weighted Squats, 3 sets of 10 weighted, turned out squats, alternating Mason Twist (abs): 3 sets of 25
Round 3: Biceps and Triceps: 3 sets of 12 each of tricep dips and bicep curls (10 lb. weight) alternating Hip and Leg Raises (Gluts): 3 sets of 15 hip raises, 3 sets of 12, on each leg, leg presses Planks (abs): 3 planks, 1 min. each.
10 min. Cool down on the treadmill.
The whole workout took about 1 hour and 10 minutes and I had a good sweat going on afterwards. I was ready to go relax with the pups, since Brett was out of town for work, and cook a nice meal.
Brett and I got this in the mail and it was so exciting! Our very first engagement card! It was from Brett's parents, and my future in-laws! So fun! I love the Cinderella Theme! So Cute! After work, I hit up the gym where I worked my little tush off! I ran 3.5 miles, which was on my 15k training plan, before heading upstairs to take a Powerflex class. The instructor really pushed us and my arms and legs felt like jello afterwards! (Which is a good thing in the long run.) I came home to the fiance' (I love saying that now!) cooking a cuban-inspired pork dish, which was simmering on the stove. It smelled delicious, and I was starving and ready to eat! Brett served the dish over some brown rice, and it hit the spot! Cuban-Inspiration! I just started noticing in the grocery store, that drinks like Vitamin Water and Powerade are making 0 calorie drinks. I decided to try a powerade, lemon-lime flavor, with dinner. I snagged it on sale at Publix and it really tastes great! It taste just like normal powerade but without the calories! So refreshing! Ok, I am off to watch Shutter Island. We ordered it from Netflix and are excited to watch! GULP!
I finally made lettuce wraps that taste EXACTLY like my dad's famous recipe! I was so proud of myself! This is one of my favorite meals that my dad makes for me whenever I go home to visit! It was like a little piece of home, right here in Orlando! Fresh out of the Wok! Wrap it up! Mmm. The Recipe is pretty easy to follow, and boy is it delicious! The ingredients include:
· Head of Iceberg Lettuce · Ground Chicken · Green Onions · Peanuts · Garlic · Hoisen Sauce
I think the key to it all is marinating the chicken in low-sodium soy sauce for 30 min before cooking! Yummmmm!
This week I have done a lot of cooking for Brett and I. I found some great recipes from websites, such as www.eatingwell.com, which i think is my favorite right now. On Monday I made bourbon salmon, sweet potato fries and a blue cheese salad. Great Flavors together! The salad was a pre packages publix premium brand salad with all the fixin's and was delish!! The salmon was also pre seasoned with the bourbon flavor and took about 3 min. to cook which was great, and also very delicious!! This was my first time making sweet potato fries and they were definitely good, but I think next time I will make them a little thicker. I tossed them in a little olive oil and sprinkled a little bit of Lawry's seasoning, garlic salt, and paprika for flavoring! Yum! Enjoying Irish Coffee and Peanut butter Balls We needed a little something sweet, so I made us some peanut butter balls! I mixed up some banana flavored dry oats, a little sugar, peanut butter, and rolled them in cocoa. After cooling them in the fridge for a little while, they made a very tasty treat, especially when we paired it with irish coffee. Pasta-licious! Tuesday night I made us a healthy pasta treat. The recipe called for the following ingredients: - Pasta
- Grape tomatoes, halved
- Spinach
- Mushrooms
- 1 Lemon
- Pre-cooked, previously frozen shrimp
- 1 cup White Wine
- Olive Oil
The pasta we had we actually got form a local farmer's market and was high protein and low carb, which we both loved! I sauteed the veggies in a little olive oil and seasoned with garlic salt. I added the shrimp and heated until hot. Then squeezed in the juice from half a lemon and poured in the white wine to form a sauce and wha-la! It was very light and satisfying, and looks nice garnished with some lemon wedges! Wednesday night i just heated up some left over pasta, added some grilled zucchini, marinara sauce and a dollop of ricotta cheese. Big, fat, 'dilla! Thursday night was a proud dinner night for me!! I made a veggie quesadilla stuffed with sauteed onions, peppers, and mushrooms, and fat free cheddar cheese on whole wheat tortillas. I added some broccoli and salsa on the side for a little something extra! Big, fat, cookies! I don't bake very well, at all, but I would love to start!! I did NOT make these cookies but someone from the office did and gave me some to take home. Boy are they delicious, and HUGE! I enjoyed one of these bad boys after dinner!
Since we are moving out this weekend, I am trying to use all of the food we have in the fridge so we don't have to waste it! So...that being said...what did I have in the fridge..hmmm...Whole wheat wraps, shredded cheese, and a couple spoon fulls of salsa. Quesadilla it is!! I added some apple slices on the side, It went very well together, since the salsa was a little spicy! Yumm!!
